Chris, glad you're happy with Tableau. When you change a viz from one to another it works better if you use the "Show Me" card to make the change. That way T reworks the entire viz. If you just change the type of marks in on the marks card then T only does exactly what you told it to do. Your bar probably turned into something like this:

Chris, building on what Matthew said. Take a close look at both those screenshots I posted. On the first one if you take the sales pill on the column shelf and drag it to the color shelf, and then copy-drag that onto the size shelf, you'll have the same viz that T built in one click. So Show Me is really just short cut. But a lot of times Show Me doesn't build a viz the way you think it will (should) and you'll end up shifting things around anyway.
