Chart Number of records by Weekday and then place the WeekNumber on the color shelf.
I filtered out Sundays and Saturdays to make the comparison easier.

I couldn't download your workbook so I made my own.
The simplest way to do this is to just make additional 'Previous' and '2ndPrevious' columns in Excel. Then drag Measure Names to color, Measure Values to Rows and Week(Date) to the columns:
You can do this in Tableau with calculated fields too using I think Lookup(ATTR([column]),-1) for one column and "-2" for the second and place the measures the same way above.
I would like to add a note that the simple lookup solution would not work if the data is organized by days and you want it by week. Lookup -1 grabs the previous value in the table, I am not quite sure how to modify the table calc to do it by week.
