I'm specifically interested in whether updates to records in the Salesforce database will push to the extract during an incremental refresh. I know they don't necessarily for other data sources if the field Tableau uses to identify new records has not changed. Do you know if the field Tableau uses to determine a new record in Salesforce would "see" the updated record?

I've dug into this a little bit and I think I have an understanding of how it works. The incremental refresh works for tables that are acting like a log (i.e. opportunity history) and in those cases it's looking for any new ID rows that have been added. However, because not every table in SFDC works like that, Tableau actually doesn't allow for incremental refreshes on some tables (such as Opportunity).
In the cases an incremental refresh is available, I've discovered it's much more stable than doing the full refresh and I'd recommend uses it.
