You can't do this by changing the x-axis crossing point... the feature just doesn't exist (you may want to add it to the ideas section and see whether there are many others who want this feature... personally I never used that option in all my years of using Excel...)
However, you can trick Tableau into plotting difference from 100, and using a Gantt type chart rather than a bar chart

Thanks for your response, your workaround looks like it'll do the trick.
As an aside, I think it's little areas like this that reveal Excel's maturity compared to Tableau; they've had the time and the money to add in these sort of niche features. I won't bother adding this in ideas, I can't see it gaining any votes!

You should add your ideas. I have the same requirement to change the starting point of the x-axis. I am sure there are other people who have the same requirement.
