Cristina, it doesn't appear that either Reader or Server (at least Public Server) allow users to right-click and gain access to the View Data option at all. So your issue seems to be limited to Desktop. In Desktop:
- Not that I know of. There are variations of this feature request in the Ideas section
- Not that I know of, although as I noted above this option isn't available in published workbook
One Caveat, I don't use Server, so these conclusions are based on how Public works.
There doesnt appear to be a field chooser option, rather I believe it can be possible to hide/unhide dimesions or measures from publishing or from data extracts. Refer this KB link - http://kb.tableausoftware.com/articles/knowledgebase/controlling-displayed-fields

Does anyone know if in newer versions of tableau, if we are now able to do this?
For instance I have a table that shows orders counts and quote counts for a salesperson, if someone were to right click on the order count number can we make it so the underlying data only shows the order count and its supporting data instead of all things tied to that row?
I would also love to be able to select which fields are visible in the "Underlying Data" view. I know we can choose to hide fields on the workbook, however there are some calculated fields that I need to use in the workbook but that have no meaning whatsoever to the end user. I'd like to hide these fields to avoid confusion.
To go further on this it would be phenomenal if we could even show/hide fields based on user filters.
I am undergoing the same issue. My user would not like to see my "calculated" fields as they have no meaning to them. Hoping that they can figure this out soon.

Don't know if this is still needed, but a workaround I use is to drag the desired fields into the 'Filters' shelf, and select 'Use All' when prompted. This way the fields you've dragged across will show in the Underlying Data view without also having to see 'All' the messy data etc.
Does this imply that only the fields added to the filter shelf will show in the Underlying Data? That is not the case for me. Or are you talking about the "Summary" section before Underlying Data?
Oh! Yes, that's what happens for me. Our organisation is currently dragging its heels massively over a Tableau upgrade (we're still in 8.0!) so maybe it's changed with a newer version. Yes, this is on the 'Underlying' tab, but without the 'Show all columns' box checked.
