This can probably be done by using calculated fields instead of ad hoc groups. The following Knowledge Base article should be able to provide some more insight:

There is an idea to quickly be able to change groups to a 'real' calculated field here, along with an excel workbook that can sort of automate it for you if your groups are large: http://community.tableau.com/ideas/1048

Thanks! I'll give both of these a try. My initial question in response is on Tracy's link. The formula for the calculation begins:
If [Customer]=’Jumbo Box’ then ‘Big Containers’
elseif [Container]=’Jumbo Drum’ then ‘Big Containers’
elseif [Container]=’Large Box’ then ‘Big Containers’
Should [Customer] in the first line really by [Container]? Is that a typo that should be corrected?
