When you first drag a continuous (green colored field) to the Filters shelf you should get an option of how you want to filter. Select "All Values" and then "Range of Values" on the next screen. When you show the quick filter it should show up as a rang slider. You can also use the little drop down arrow on the quick filter card to adjust how the quick filter displays.
If the field is blue it is discrete. You can convert to continuous by right-clicking the field. Then follow the above steps.
If you are still stuck, please post a packaged workbook (using dummy data) and I'll see if there is something else that is a road-block.
My field is blue and when I right click I do not have the option for continuous or discrete...does it matter if it is a bin?

That does make a difference. Bins are always discrete.
However, you should be able to use a quick filter for the field the bin is based on. So for example, if you have have "Sales" and "Sales (bin)" then you can use Sales (bin) on the axis and Sales on the filter shelf as described above.
