At first blush you just need to concatenate the county and state name. You can still use the well formed names for labels and such but you wouldn't need to deal with the county and state name separately,
you can check and see what I did here with the same data.

That's a beautiful viz. It looks like you have lat/long fields for each of the counties - is that something that was in your dataset to begin with or did Tableau populate that for you?
The original dataset that Andy Kriebel used had the lat, lon. Having your own coords in the dataset lets you do quite a bit more like multi marks and distance calculations.
