Is the Tableau staff still answering questions on the forums? It would be great to have confirmation of the bad news or maybe a fancy "hacking" solution.
I think I need to reply to my original post to have a chance to draw Tableau people's attention.

Sorry no one from Tableau addressed your question directly. Since this is a community forum, the folks from Tableau who read/answer are pretty much volunteers - we don't attempt to look at each and every thread as the community does most of the "answering".
Anyway, the answer to your question is "you must re-create the extract" if you modify the data model.
I feel your pain as well. I worked with many other BI tools and never had to be forced to refresh the entire query unless I wanted to.
There are a couple of things you can do while developing and testing:
1. Turn off Auto-Updates
From the Menu Bar -> Auto Updates -> uncheck Auto Update Worksheet F10
You can turn it back on when ready to publish to the Server.
2. You can modify your Custom SQL filter to select only a subset e.g., a narrower date range or some other column you are familiar with.
3. Create an Extract - you can specify filters on the Extract as well.
I hope my suggestions help.
You know what? These "features" - Auto-Updates are pretty quirky as well. I'm disappointed! Sorry Yann.
