If there was always a date created for every last activity date, or vice versa, you could do this with a duplicated data source, but I believe the best option here is to reshape the data so you have one Date column, with an extra dimension that indicates whether the date is a created date or a last activity date. The reshaping could be done manually, via Custom SQL in Tableau, or a via a query in your data source. Then the measure(s) will be simple to create.
I face the same problem. It seems that one should be able to define the x-axis as a range of calendar dates and chart the counts of Date Created and Last Activity Date as separate lines. Very frustrating...you should not have to manipulate the data using SQL.
