Forgot to mention that after hitting my final Okay in the join popup window, Tableau gives me the following message:
"Data extract is active. To continue the operation it must be regenerated. Filters will be cleared. Would you like to continue?"
Not sure if this matters, but thought it might.
Does it regenerate the extract? Do you not see the new columns?
No, Tableau does not regenerate the extract. No new columns are shown in the Dimensions window. Nothing happens.
Seems odd when the preview works - I would contact support@tableausoftware.... maybe also look in your log files
The very same thing is happening to me. Can you post your progress?
On a guess, I did a manual refresh of the starting extract. In other words, let's say my starting extract is called "Sales." I then did the left join process with a second table from the same access files, called "Orders." Tableau gave me the final message about the need to refresh the extract, which I assumed should be automatic, but my tableau (desktop version, v7.0) did nothing. Immediately after receiving the final popup from tableau, I did a manual refresh of the Sales extract, and it worked. The manual refresh caused the variables from "Orders" to popular with the variables from "Sales" in the dimensions and measures windows. This seems to have completed the joining process.
Tableau can be so frustrating sometimes.

I had assumed the same thing, that it would refresh automatically.
You should definitely report this as a bug

The issue being reported is a known issue and our Engineers are working to fix the issue. The behavior is expected to be fixed in our next major release - version 8.0.

It's because you're working on an extract.
If you right-click on your original data source, and uncheck "Use Extract," THEN you should be able to see the joined fields! You can right-click and extract the data again if you like.
