One option may be to publish each data source to the Tableau Date Server and set the extract refreshes there. Then, create the workbook from these.

When publishing the workbook to Tableau Server and setting the extract schedule, the extract set to refresh incrementally will follow the schedule set for the incremental refresh, and the extract set to
refresh fully will follow the schedule set for the full refresh. Although the data source is not explicitly specified when selecting incremental and full refresh schedules, Tableau applies the Incremental Refresh schedule to the
extract set to refresh incrementally and the Full Refresh schedule to the extract set to refresh fully

Not sure if this is still up to date. But my test shows this is not true.
(1) “Full refresh” will do full refresh even though the data source is set as “incremental”
(2) “Incremental” will do incremental refresh to those incremental data sources only, since Tableau does not know incremental key for those need full refresh only. But if you have multiple data sources need to be refreshed incrementally, there is no way to track how many rows are added for each. The background extract dashboard only shows rows inserted for one of the data sources.
I created two datasource one incremental and one full refresh.
Updated the bcak end table data ( not the field which is used by incremental refresh ).
Refreshed it on Tableau server ( Full refresh) .
Two things happened.
1) Tableau refreshed the full refreshed exrtract correctly i.e it was a full refresh
2) The extract that was supposed to be incrementally refreshed was also completely refreshed.
So that means all the extracts ( does nt matter full or incremental ) will be fully refreshed on tableau server, If Full refresh is clicked.
If yes then how can we have multiple data sources with different refresh strategies in same dashboard ?
