As a general rule, you can access anything in the tooltip that is on the view, or in the Level of Detail shelf.
You should be able to drag the measure in question into you Level of Detail shelf, and then you can change that pill in the Level of Detail to switch from SUM aggregation method to AVG aggregation method.
You can then reference this aggregation of the measure in your tooltip without necessarily representing it anywhere in your view.

Looking for a way to change that SUM of Avg to something else - maybe only the AVG and not the total sum or maybe the Cpk for that selected points. I already have the Cpk calculation as a calculated field.
I tried but couldnt find any solutions as such. Also tried with Mark suggested. Didnt help.

Currently the ability to modify the aggregation level or type for the items selected value in the tooltips command buttons is not yet built into the product.
To prvent the items selected from showing at all, you can choose to not include the command buttons, using the following.
Marks Card > Tooltip > Uncheck the Box : Include command buttons.
