There would need to be a record in your data for the Very Dissatisfied to appear in the view. If you can't add it to the data, one alternative may be to create a lookup table and join it to the original table.

These both deal with SQL, but you should get the idea. You could set this up in an Excel sheet instead, if needed.
But like Tracy said, if you just add a record for the dimension value that you want to include in your original data source, it will show up inside Tableau. Seems the easiest route, if you can do that yourself or ask your DBA to do it for you.
Mmm. Thanks for your help Matthew. As the lesser of two evils, I tried the workaround involving adding dummy rows to my data which contain the extra data I want but no other data. However, now every time I try to "show empty columns/rows" (so that the dummy records are included in the view) Tableau crashes (see screenshot below). Any thoughts on this? Anyone experienced the same?
