I'm currently using v7.0.0 and want to upgrade to 7.0.5 - will all my dashboards repared on 7.0.0 work on newer version?

All of the workbooks that were created in 7.0 will be able to be opened with 7.0.5, and any fixes that were made will be applied.
Seriously, for software as powerful and complex as tableau - in this day and age - you 'd think you would have an automated update process like virtually all software does

Are you making a distinction between upgrade and update? I would assume that 6.0.X to 7.0.X would be an upgrade and I would uninstall version 6 first. If I want to move from 7.0.4 to 7.0.7, do I have to un-install the current product? If not, can I just install 7.0.7 over 7.0.4 or must I install 7.0.5 and 7.0.6 first?
It is not necessary to uninstall any versions of Tableau--Both major and minor versions of the software may be installed concurrently on the same machine. Uninstalling any previous versions is not necessary for a successful upgrade. It is important to know that if you are upgrading between maintenance releases (e.g., 7.0.1 to 7.0.2), the newer maintenance release will replace the older maintenance release, but again uninstalling the previous version is not necessary.You also can upgrade from 7.0.4 directly to 7.0.7. The KB article referenced above provides further information on upgrading Tableau Desktop.
