My first guess is that users don't have the proper permissions to use the Data Sources you've published.
Login as an Admin and take a look at your data sources:
Choose the Permissions menu item, and see what you can see:
Use the "edit" hyperlink on the far right to see what "All Users" can do with the data source in question:
In this case, all users have permissions to view & leverage the data source.
You might also want to check the permissions that a particular user has against the data source with this dialog:
In the example above, user Test1 has the proper permissions to leverage the data source in question.
I'd suggest you eyeball this stuff first, and let us know if it all looks OK and you still have a problem.

Yes, the new data sources are configured and confirmed as above.
Did you see that I mentioned that the demo examples do not show up as well?

We don't actually add any demo Data Sources to the server, only Data Connections that are a part of our sample workbooks...so those shouldn't show up.
Would you mind taking / posting a screenshot of what you see in the Data Sources list and what you see in Tableau Desktop?
I'm not a support guy and you may have to end up opening up a case, but let's see if we can't help you here first.

Just curious - you are an admin, correct? (Not that one needs to be to make this work). I'd like to take Desktop out of the picture altogether.
If you login to Server (as an admin), and then run this:
http://localhost/manual/published/datasources.xml
...what do you get back? You should get a list of data sources. Mine looks like so:

Two things:
- Publish a new data source and try again - see if there is a change in behavior
- From your screenshots, it appears you are using Sites (multi-tenancy). You are logging into the same site that the Data Source exists in when you request it, right? I get the same (bad) result as you if the data source lives in the Default site, and I request it from "Site2", for example.
...I think it probably is time to spin up a support ticket, in any case
