I've been using Tableau since v6 and, even though you've increased the column limit since then, I'd still like to create even more complex crosstabs. The fact that Tableau limits the number of columns to 16 really adversely affect how our company utilizes the tool. I like to create interactive dashboards that update a crosstab so that the user can easily dig in and review only the relevant underlying data. With our complex data, this is a best practice for us. This limit forces our users to continuously download the crosstab or use another reporting tool to view the data successfully. It seems like an easy addition to me but, if there's a great reason why there is a limit, I'd love to hear it.
