Customize fields displayed in view underlying data

Hello, we are currently using Tableau 7 (desk and server versions. I am exploring options for drilling down to detail on dashboards published to the server and have two different questions related to customizing what is displayed in the view underlying data window :

1) Can we only select certain fields that will display in the view underlying data window? Or, as a separate option, can we select dimensions and measures that we never want to show to the users?

2) Can we un-check the "Show all fields" box in a way that this option is not even available for users of published dashboards?
