You could also leave the source live and have it reach out whenever accessed for new data, at the expense of performance
More nuanced: even if the source is on your computer or in house and not accessible outside the local network, you can use Bridge: Introducing the Tableau Bridge: live queries to on-premises data from Tableau Online | Tableau Software
If you run your own server, you have even more control such as reaching sources that use SSH tunnels.

Thank you for the response.Let me put my question in detail and with specifications.
Can we do incremental refresh on a datsource or does it have to be data extract?
To create a data extract do we need to use Tableau Desktop or can we create Data extract on Tableau server?(I do not see an option of creating an extract on the server)

The extract option must be selected in Desktop prior to publishing (or republishing) the data source. You can change the scheduling of the extract on Server, but not change from a live to extracted source.
I would guess that if you choose incremental refresh on Desktop, that will be what happens on Server as well after publishing.
