The fonts available in Tableau Desktop are pretty much the same fonts as are installed on your computer. So, if you'd like to use Helvetica, you'll need to install it on your computer. It should then be available in Tableau Desktop.
However, Tableau Server does not support all fonts. Are you planning to publish this to Server?

Custom fonts have to be installed on Tableau Server so you'll need to check with the Tableau Server Admin. But custom fonts also have to be installed on computers of people who will be viewing the dashboard on Tableau Server. That's very difficult to control, so it's a best practice to use a web-safe font (see Use Custom Fonts in Tableau Server - Tableau for more). There are a number of these, including:
Comic Sans MS
Lucida Sans Unicode
Times New Roman
And the "Tableau" fonts will work as well.
