What you're describing is the perfect situation for creating a group. Right click on your Location dimension in the side bar and select "Create" > "Group".
Then you can group your values exactly how you have them described above.

Now suppose I have a 'Measure' called 'Expenses' and I want to break that down into 4 groups called 'North Expenses', 'South Expenses', 'West Expenses' and 'East Expenses'. To start, is it best to create a 'Calculated Field'? and if so, what would the syntax be?
Hi Douglas - for your second scenario, if you put your group on the row shelf, then drop your expenses on your label mark, it'll break out the expenses by region. If you want it specifically called North Expenses, South Expenses, etc, you can create a calculated field that takes your group and adds the word Expenses to it, like this:
[Group] + " Expenses"
