Have you considered participating in a project like Makeover Monday | A weekly social data project? They give a data set each week and ask you to do a makeover. It doesn't necessarily ask you specific questions, but rather provides you with a data set and gives you the freedom to do what you wish with it. Also, for a more technical practice, you can try Workout Wednesday – #WorkoutWednesday. Here they give you a dashboard and ask you to recreate it.

I had this challenge to solve within 1 hour and I failed the challenge since I was just dealing with creating basic charts. But this failure made me consider practicing with different data sets.
The part I struggled during the challenge was to work with "Geometry" that had "polygons and multipolygons" [

Here is a tool that google released recently Dataset Search. It has loads of data sets, most of which can easily be used with tableau. You could browse that, looking for topics that you are genuinely interested in. They've got everything from weather, education, healthcare, sports, etc etc. When you have data you are really interested in, the questions will come naturally.
The forums are also a good place to challenge yourself. People have all kinds of real-world problems, ranging from relatively straightforward to very complex. Answering questions here is a great way to enhance your skills.
