Sophie- Couple of questions,
Is this happening to all workbooks with subscriptions enabled or just particular workbooks? - Re-Publish the said workbook and try.
No users were getting emails or only particular users? - Check if there are any unlicensed users in subscriptions list.
Try these and let me know if you're still having issues.

We were not using subscription functionality earlier, have recently activated it post upgrading it to 10.5.7. No we are getting an error "Could not connect to host"
This error persists across all workbooks and all users
- When the TS comes up, like after a tabadmin restart, do you get an email notification?
- You stated "The mail server is unencrypted and does not require username/password" but did you fill out the fields anyway in the SMTP Setup tab? Configure SMTP Setup . If not simply use your own credentials and try it.
Also, it's not recommended sharing the TS with other applications due to performance degradation and port conflicts.
1. No even when we re start, we do not get any e mail notification.
2. I tried using my credentials in username/password . It accespted but stil the notification failed
