You can create an adhoc calculation and set the 'title' using quotation marks:
Then hide the label:
Tooltips usually only appear for items in the viz - ie as a mark, bar chart, or text. The headers only have tooltips available when the text has been truncated (where full text cannot fit into the header space).
Thank you Mavis. I got the title on the last column now. That solved my first question.
My second question was to get the tooltip displayed on all dimensions.
If I hover the mouse on a value in the last column, I see the tooltip. Not on the header, but on a value row.
I want to be able to do this on a value row in the first column as well.

Yes the tooltips will not be available on the headers - when I say headers I mean the dimensions which are on the rows. These are not part of the marks so there's no tooltip UNLESS the text cannot fit into the header space.
