Unfortunately formatting Grand Totals differently than the data is not possible. At least not easily, here's a thread. I'm not sure the workaround would be worth the effort but it's up to you.
We dont have option to do in tableau,however there is workaround to do this.
First exclude grand total in the report and create separate tab for grand total like below and combine them in the dashboard.
Steps to follow.
Created Grand Total in seperate view
Sub report with detail values
combine both details and grand totals in the dashboard and format accordingly.

ShivaRam, Thank you - I ran into that page in my research as well and haven't had time to try to implement. It does seem like a lot of work for this and I will need to do this in almost every dashboard I build for enrollment. I'm going to Conference so I will put it in for an idea for a future Tableau upgrade.
Venkatram, yes, thank you for this. Not ideal but is a good enough work around for now. I do think Tableau needs to offer the separate formatting for the totals compared to the body of values. It seems to work if you only have one measure - but multiples measures in the table and the ability to format the totals separately disappears. I'm using 10.4 - not sure if the newer versions have this capability yet.

I've tried this on 2018.2 and can confirm that there is no out of box solution, however I remember reading it somewhere that this was available in older versions. (prior to 10 I think, although I'm not sure about.)
