If you go to the data source tab, you will see that all of your hidden fields are still available if you click "Show hidden fields". That way, you can right-click on a field and unhide it - like in case you accidentally forgot a field you needed.
However, once the extract has been created then yes, Tableau will run faster because it's only communicating with the fields it's brought into the extract.
I hope that makes sense.
This is not what I am asking. Let's see if I can clarify. I am not asking about the query to the extract but rather to the data source. Say my data source is a table named my_table with the fields id, name, number. If I hide id and number, when Tableau Desktop/Server queries my_table is it doing:
select name from my_table;
Or is it doing:
select * from my_table;
And then eliminating id and number from the extract?
