That is so weird. I swear that there was instructions on how to do this. I just went through the upgrade process myself and did not see a place to select the drivers, but I believe the option might only appear during a clean installation, attempting this next.
I have dug through the documentation and was unable to find any information myself.
Will reach back out to this thread if I am able to find anything.

For the Windows version of Tableau Server, there is not an option to install Tableau Server without the default drivers (which are currently PostgreSQL, Oracle, and Oracle Essbase) but you can certainly uninstall the Oracle drivers after install - we don't recommend uninstalling the PostgreSQL drivers as this will break the admin views.
Tableau Server for Linux doesn't install any drivers by default.
