If your data source are published individually to Tableau Online/Server, set each of them to a refresh schedule - same or not - and then modify the priority of when each published data source kicks off.

You can then modify your workbook to use the published versions of the data sources instead of embedding them in the workbook.

Thanks for this info, but that is not what I'm trying to achieve :-)
You cannot set the order of refresh when there are multiple data sources in a workbook. If the order of refresh is really very important to you, then you could publish each of the data sources to the server and refresh them with independent schedules in the order you need.
Currently, we cannot set priorities/order for extracts in "Refresh All Extracts" feature in Tableau Desktop.
Also, i'd like to mention, we cannot refresh multiple extracts at a time (say, 5 out of 10). We can either refresh individual extract or all extracts.
