When using the sort icon you will cycle though ascending, descending, and default sort. The third option will show the default sort order which is likely the data source order. With dates the ascending and data source order may be the same.
This cycle of ascending, descending, and default data source order is easier to see when sorting on the non date field in the view. If using Tableau Desktop after clicking the sort icon, you can see how the sort is applied by right-clicking the date field on rows or columns and selecting Sort.
