nested IF clauses stop evaluating once a TRUE condition is met.
And a calc always just evaluates down to a single value. There isn't an iterative concept to running a calc and adding to existing value within the calc.
The quick and dirty solution for what you are describing is to have multiple calcs, one for each keyword. Then concatenate the intermediate calcs together to get the final string. This would obviously get messy of you have 100 different keywords, though, and/or if your list of keywords will change over time.
One last thought. I'm not proficient with the REGEX function, but that's a string manipulation function and maybe there is a solution in that world for you.

I can do separate formulas within excel and then pivot those columns when importing into tableau.
