in short no, tableau reader lets the user see everything you have created but without the ability to edit.
You can hide worksheets, but only if they are part of a dashboard elsewhere in the workbook (therefore still visible).
You can make a dashboard blank by using a filter,
Create a calculated field that is always false e.g. 1=0
Drag this to the filter shelf and select true, the sheet will now be blank. When shared with people via reader they will have a blank sheet, but opened in desktop you can easily remove this filter.
