Two things to check:
a) You can actually extract a server hosted datasource into a workbook, which caches it locally to the workbook. Open the workbook and make sure that the datasource is connected directly to Tableau Server, not an extract of it.
b) Sometimes the server hosted datasources get cached longer than they should. You can add ?:refresh=y to the url (or push the refresh button) to trigger a content refresh, breaking this cache.

Thank you Derrick – I have many users viewing the server version, so I really need the server view to refresh. When I clicked “Refresh” on the server view, the data did not refresh. Any other thoughts? Thank you very much!
If "Refresh" doesn't help - check into "A". It definitely sounds like that is the issue (Assuming you are connected to the correct server hosted datasource)
