What is the difference between live connection and extract connection?

Live issues queries to the database.
Extract downloads all the data (you can filter just to the amount you need or aggregation level you want also) into Tableau's columnar data store called Tableau Date Engine (TDE).
When you create an extract, since you're taking the data with you, you don't need connection to the database server. Also you wouldn't be putting load on a production database (if that's what your live queries are running against). Most likely aggregate calculation will also be much faster with an extract.

When you extract the data, you can apply filters, and hide unused fields.
You could also aggregate the data.
All of these help reduce the size, which reduces the processing required, which (should in theory) improves performance
You would be best served reading up on it, there are lots of resources available...
