This is a total guess, but...
- Create the thumbnail you want to see on a dashboard. It could just be an image object
- Have this dashboard visible when you publish the the workbook to Server
I think that should do it. If it doesn't, try renaming the workbook something else, and publish it to a new name. If that doesn't work then my guess is wrong...
Thanks so much for the response. We’ll have to decide if we’re okay with adding an extra dashboard to each of our existing workbooks, but this is one very simple & elegant solution – thank you!

It's possible to customize a Project folder's thumbnail with some simple HTML, but I'm not sure this method would work for individual workbooks.

I don't think it can be done.
From what I can see, the thumbnail image is pulled from the workbook. Below is a screen shot from my Server (Developer option in Firefox) and the AlertsAlerter workbook has the ID of 1344 in Tableau's postgre db public.workbooks.
I checked a couple other workbooks and the value used in the HTML matched the ID of the workbook in the database.
