Currently TabMon does not have built in logic to delete old data, however we are exploring the best options to make this process easy for users. For now there are external tools such as PgadminIII and others that can delete data from Postgres dbs.
Hmm, good question! I hope in a [near] future update there is a way to do this.
This is a feature that we have been discussing for the past few days. We've concluded that we do need a flexible method to delete old data, but we haven't figured out exactly how we would like to tackle this.

The Abiity for the user to config, on how many days old data can be deleted is a good idea and must. Hoping to see these features in the next releases.
