Probably the easiest (and Free) way to learn Tableau is using their on-demand video tutorials
In terms of book. The main one I'd recommend is
Tableau Your Data by Dan Murray
I found this very well written, clear to follow. It doesn't go to 'super-advanced' level but gets you 80% of the way there (and this is usually all you'll ever need). I tend to find 'super-advanced' work-arounds/tricks tend to be found on the community here (look at the Tab Wiki, Workbook Library) and across the many Tableau Blogs. You are in luck, Tableau has an amazing community of contributors who take a lot of time in creating blogs, help articles and (of course) answer questions here on the forums.
