Couple of questions:
1) Are you referring to extract refreshes (I assume so)?
2) What are you considered the "latest version"? 8.2, Beta 3, was released last night.
Regardless, I think the answer is "no"--I believe the lowest setting is 15 minutes.
You can run 3 x 15 minute schedules against one extract 5 mins apart, but if you want a schedule refresh every 5 mins consider a live connection instead.
You can add additional schedules in the Administration section of the Tableau Portal.
However, trying to use in-memory extracts in a near-real-time scenario generally isn't a great idea, especially if the extracts take more than a minute or two to refresh.
If you need "close to live" access to the data, you should consider connecting "live" to the data itself. Much more simple.
