Nope. You can use the URL to direct users directly to a sheet, but no way to default to a sheet.
I'd love to see them enable the default to opening the first sheet on the dashboard. Users are easily confused by the current setup, particularly when looking at the list view (rather than the thumbnail).
If you remove the Server site altogether, and embed in your own site/portal, you'll have a lot more flexibility--but potentially a lot more maintenance as well.

I hate to put responses like this but I'm pretty sure the answer is no without hacking Tableau Server.

Meanwhile, if you click first on Content Views and under Filter section, select the Project, you will see the views instead of workbooks.
That bit of functionality is funny, never even knew that was there.
They really need to step up our ability to organize content on the Server site in a more meaningful way (my opinion, of course).
This kind of thing should be included in the User Preference. I mean, a setting that a tableau server user are able to define.
That is an excellent idea. I agree completely. They can define their start page, why not allow them to define a default worksheet within a workbook? Makes a lot of sense to me!
While I agree that a setting(s) in Tableau Server would be ideal, your workaround is more than good enough for my purposes.
