Try the following. I just discovered it the other day:
- Copy the dimension with the value(s) you want to hide
- Bring the copy onto the sheet and filter out the relevant values using 'Exclude'
- Bring in the original dimension and set to "Show Only Relevant Values"
- Filter on this dimension
I've attached a simple example

but i'd say that solution removes the hidden values from the results since they're excluded
our goal, based on your example, is to keep Saturday and Sunday hidden from the filter but not their value (in case I run a sum(Value) we want to have Saturday and Sunday in the total
Alberto, you'd be right in saying that. And the functionality you are looking for doesn't currently exist in Tableau.
I think Ville's done it.
I was thinking you could use a parameter to select a weekday, then link that to a calculated field that takes the value of the parameter and adds the sum of Saturday and Sunday, but I'm not sure how (calculated fields aren't my strong point!).
Obviously that works well if you don't have too many values in your dimension.

that's a possible solution but involves "touching" the data (duplicating rows and creating new columns)
but that does not work for our case since we're managing thousands of rows
we already considered your option as well, parameter populated from the domain of a field + calculated fields
that works as well but not for us since we need that parameter list to be updated dynamically and filtered via URL parameter
which is not possible yet, parameters usage is a bit restricted right now, hopefully will not soon since is a top demanded feature
What kind of variables are you trying to filter? Weekdays? Products?
