Is there a way to use a quick filter and automatically create an "other" category?

I have a workbook that has data by state. I need to allow an end-user to choose several states to highlight and lump everything else into "other". I can't see a way to do this with quick filters, sets, or calculated fields. Am I missing something? So for example, if the input is (two fields shown to explain the concept):

      • Arkansas - 100
      • Alaska - 100
      • Arizona - 100
      • ... (100 for every state)
      • West Virginia - 100
      • Wyoming - 100
      • Total: 5,000

Let's say the user (very non-technical, and not even really a Tableau novice) wants the following:

      • Arkansas - 100
      • Alaska - 100
      • Arizona - 100
      • Other - 4,700
      • Total: 5,000

Hopefully this makes sense. It seems like this should be easy, and my brain may just be overly tired today, but I can't see how to do it.
