You can try a calculated filed using something like:
SUM(IIF([Product]=='A' OR [Product]=='B',[Value],0))/
and have your State dimension on the sheet (or as a filter), to calculate separately for each State.
Thanks Dimitri however this would require coding all the possible Product values rather than just the "Total" value.
Do you have Total rows inserted into your data, as in your example?
If yes, are those Total values the same as SUM of all relevant row values?
If yes, then you don't need to use Total rows at all, you can just get Tableau to calculate % of total.
yes the Total is part of the data, special calculation hence its not an easy SUM of the values.
Can you reshape your data to have Total as a column?
