I have some good news for you, and some bad news, too.
First, the good news - you're not missing anything. The bad news, of course is that you're not missing anything.
Since Tableau considers sites to be a way to "slice" the server up for distinct user communities that should not generally interact, there really isn't a use case for moving a project from one slice to the other. If you feel that this would be a useful feature, please submit it in in the Ideas forum.
You're not completely out of luck, however. At the Tableau User's conference, I presented a script written by a co-worker that pretty much does what you want. You can find it in the zip file at http://tcc12scripts.notlong.com look for the folder called 3 - Report Migration & Publishing and inside that you'll find a script called "publish.bat".

Thanks Russell - have not yet taken a look at the script...hopefully it will have arguments to allow one to select a single workbook to move over to a different site instead of a project...have been trying to figure how to do that for a while. Also thanks for the scoop on the "unlikelihood" of Tableau adding it natively.
I have downloaded the publish.bat in Report Migration & Publishing. Can you give me some simple instructions of how does the .bat work?

Please, please, please don't take this the wrong way - but if you're not a "programmer-at-heart" and what you're looking at doesn't make a whole lot of sense, then it probably isn't for you. At least, not yet
The stuff in that zip file is more for hobbyists already familiar with writing and running script files vs. someone new scripting.
That being said - this script searches a specified folder and loops through each workbook in that folder, publishing it to the server of your choice. The author included some simple instructions in the batch file itself, which you can read by opening it up in notepad.
Probably not exactly not the answer you're looking for, but I posted that stuff "as-is". Sorry.
Since then the link for the script became unavailable.
