Hi Gordon, thanks for this question. I've seen Joe Mako do it, and I'd been meaning to track this trick down. There are probably other ways but this is the one I hit on first:
1) Ctrl-click the measures you want on the shelf
2) On the Show Me menu click the text table
This gives you this:

Another route is to place the Measure Names field on the Filter shelf first, this will give you a filter dialog to select your measures. It has the added benefit of a find for when you have too many to scroll through.
The route that I commonly use is place one aggregated continuous pill on the either the Rows or Columns shelf, and then drop the other measures I want onto that axis.
Another one is placing the first aggregated continuous pill onto the Text shelf, and then dropping the other pills onto that mark.
