This can be done in the Desktop - just resize the columns by dragging column borders to fit all text, and make the heading row tall enough to allow wrapping (also by dragging the border).
Also, by default Tableau will resize the view to fit whatever window size the browser is giving it, and browser depends on monitor's size and resolution, so having a big monitor with high resolution and maximising browser window should help here.

It seems that your solution is only for manual viewing? I agree with what you said there -- if I open it in a browser it does try to fit in the page.
But in my case, I'm getting the output using command-line tabcmd-get.
tabcmd get defaults to 800x600 so if you set your browser that small you'll see what it will grab. The workaround is to put the view on a dashboard and set the dashboard to a minimum size. That minimum size will be respected by tabcmd get.

Another possible solution that I found -- well, not really solution for png/pdf problem but apparently my clients are just as happy if I could output in crosstab (csv) and since tableau 7 has this capability I think i'll try this route first.
