Steve, out of curiosity what happens if you blow the workbook away on the server and re-publish? Do you have a different server you can publish to in order to test the behavior?
If you have a sanitized version of the packaged workbook, feel free to send it to me at rchristopherattableausoftwaredotcom and I'll load it up on a couple of my boxes. I can share a dropbox out to you, too - just shoot me an email.
You could be running into something specific to your client's environment and support will need to get involved, but let's rule out other possibilities first...

I installed Server on my home machine and the Chrome / Tableau combination produces the same problem.
It does appear to be a Tableau / Chrome problem and not specific to the client's installation.
I will fashion a sanitized version of the workbook and get it out to you.
