I don't know about the same visualization but you can definitely make a bar chart which will represent the percentage number and fix the axis from 0 to 100 using edit axis option which comes on right clicking the header.

I'd suggest starting by creating a dual axis chart like this. The first shows your percentage and the second just goes up to a value of 1.
Then make it a dual axis and synchronize the axes.
Then turn off all the headers, gridlines, etc.
Finally, put it on a dashboard.
I've made it very large so you can see what's happening, but you can make it smaller if you like.
Next, we'll use a technique developed by my brother, kevin flerlage: https://www.kevinflerlage.com/2018/10/creating-filled-shape-charts-in-tableau.html. Basically, we're going to create an image outside of Tableau then float it over top of the chart. In my case, I used PowerPoint (see https://www.kenflerlage.com/2018/03/powerpoint.html for more) to create the following image. Note: The checked areas indicate transparency. Also, the image does not include the grey border. I'm showing it just so you can see that the shape has an outer part that is white.
We'll now add this as an image and float it over the bar chart. You may need to adjust the size of the bar a bit to get things to line up, but after you're done, you should have this:
You now have a pill KPI that looks pretty much like your example. You can then bring other sheets onto the dashboard to display the text and the value of the KPI. You can create other similar KPIs, etc. I should note that you won't be able to interact with the chart since there is an image floating over it, but in this case, interaction is not necessary, so I think that removing interaction would be preferred anyway.
