Hey Roderick - you can always use the Administrative Views: Administrative Views - Tableau
If that isn't providing the level of detail that you want, try utilizing the Tableau Postgres db and build your own report on top of it: Collect Data with the Tableau Server Repository - Tableau

In addition to the built in Tableau Server views, this post has a number of pre-built Postgres data sources and workbooks that you can use to create your own administrative views.
Building your own admin views also allows users who do not have administrative permissions to see usage stats which can also be useful. Highly recommend this link!
Hi - I know this is several months old but this post has a great KPI workbook you can use for tracking workbooks and user traffic as well. All you need to do is point it at your instance of your Tableau Server postgreSQL database.
You would need to hit the postgre database for the additional measures you're looking for as Benjamin and John mentioned earlier though.
