You can set up an extract on Tableau Online using both options (data source embedded in the workbook or published separately). It all depends on your needs and use of Tableau Online. Each way has its own advantages.

unfortunately our extract refresh in Tableau Online is no more working. Our data is saved on a PostgreSQL Server.
In the past we did the following steps:
1. Created Tableau Desktop File
2. Created Extracts
3. Published Datasources
4. Published Workbooks
5. Setup of Extract Refresh in Tableau.
For some time the extract refresh is no longer working, neither in Tableau Online nor in Tableau Desktop.
The extract (1st datasource) is only showing Data until 18.07 although we updated the extract several times. We don't know why, but the connection to the data sources is strangely not working.
If we add the same data source (2nd datasource) again with live connection we get the actual data.
In the past we never saw this window if we clicked on the datasource of the extract. Maybe this is the trigger?
Can anyone help?

What type of extract refresh did you set up on the first data source, full or incremental?. Also, are you using the exact same query in both data sources (extract and live connection)?
As both data sources are uploaded to your Tableau Online account, you can create a local copy of each one in order to see the details (query, refresh type etc.). To do so, follow the steps 1 to 4 on this article https://kb.tableau.com/articles/howto/edit-a-published-data-source and then go to the Data Source tab on Tableau Desktop.
