We need to see your workbook to investigate.
Please attach mocked up sample data twbx, and if you could attach excl as well, that's more helpful.
In general, with table calc, G.total's behavior is not straight forward.
Please Attach a Tableau Packaged workbook so that it will be easy to answer your question.

Unfortunately, I cannot attach a Tableau workbook here due to security.
I understand grand total isn't calculated in a straight way so will have a further look.
This really depends on the level at which you aggregate the value of Buy. I am also wondering if you are filtering out NULL values or giving them zeros.
Is your Sales Amount field coming directly from the data or is it a calculated field? Also, how is it set to calculate (since it's a table calculation)? If you're unsure, click on the field on your text mark, select "Edit Calculation" and then take a screenshot of that.

After selecting SUM or AVERAGE, the grand total isn't changed.
I gave you helpful since it was good to know the function on Analysis tab!
