Are there any filters present on the extract that could be filtering out data causing the change in the value? I would double check for data source filters that could be present on the extract.
I am also curious what version of Tableau is in use? This could help me with researching for any other reports of this behavior.

Also, do you see differences in raw (row level) data, calculations or aggregations?
Did you do any sort of troubleshooting yet? At minimum, compare the row count.
I've seen cases when database decides to stop sending rows during extract creation or extract happens in the middle of ETL process on the database.
